SPAIN: Turkey in sauce (en inglés)

Today we have a Spanish recipe written by one of the members of our team, Belén Molero, student of the last year of English Studies. She says she really likes this family recipe and wanted to share it with all of us!

Turkey in sauce

In Spain it is traditional at Christmas to make recipes with turkey, as well as with lamb. At Christmas, my family traditionally cook this recipe. My mother has done it thanks to my grandmother who is a great cook. The recipe was a bit modified by my mother, and the result was very good!


  1. 1/2 turkey (if you want to do it with one turkey just double the quantities of the ingredients).
  2. 1/2 glass of sherry wine.
  3. 1 glass of white wine (specialized for cooking).
  4. 1 piece of Serrano ham.
  5. 1 dried red pepper.
  6. 1 onion.
  7. 1 leave of bay.
  8. 1/2 head of garlic.
  9. 1 small ripped tomato.
  10. 2 strips of bacon / 2 strips of double chin.
  11. 3 glasses of lukewarm / hot water (approx.).
  12. Pepper.
  13. Salt.
  14. Olive oil.


  1. Chop the turkey. Put some olive oil in a pot. Put the turkey in it and brown it slowly. Meanwhile cut the Serrano ham and the strips of bacon or of double chin into small pieces. When the turkey is browned add salt and pepper to it.
  2. Cut the onion in julienne strips (you can brown it a little, but it’s optional). Add into the pot the onion with the rest of ingredients (except the wines) one by one, not all of them at the same time.
  3. Stir the ingredients which are in the pot. Then add the glass of white wine and the half glass of sherry. When the wine has been boiling for a while, add the three glasses of water. Simmer it (you can do it in a pressure cooker, simmering it for ten to fifteen minutes).
  4. When it’s ready serve it and enjoy it. It’s delicious!
